I had owned a combination smoker. It was a stainless steal tower that had a propane burner in the bottom and a disk for charcoal above that and a water tray and a pair of steel meat racks above all of the burner stuff. It is a nice unit. It is not a smoker unit. It was sold as a smoker unit. You could not control the temp enough to slow cook or smoke a piece of meat slowly without a lot of supervision. I mean a lot of supervision. The temp would go up and down. What I love about the Big Chief is that it is a smoker. I can put any product in it I want to smoke and not worry about over cooking. I smoke hams, turkey etc in the Big Chief and then bring them into the kitchen oven to bake. I have control. I control the amount of smoke, I control the baking.
The Big Chief has been very predictable for jerky and for sausages. We are getting spoiled by the summer sausage done in the Big Chief.
I would guess that anyone reading this testimonial has spent some bucks on cookers and so called smokers. I tell you this is the real deal. It works. It is priced under all the others. You will be thrilled with the control you have to smoke foods.

The smoker works pretty well. My only criticism would be how it is put together. It definetly is more complicated than I like especially compared to others we have seen. After buying this we saw another one at Lowes that just looked more professionally put together with a simple door that you open on hinges for even less money. It works for smoking and the products are great, it just feels like putting together an erector set to get the door back on and the shelves in. The door sort of slides off and you have to put it somewhere. You also can wrap it up in a heat shield which again is another awkward piece to have to do something with between batches.It is as pictured, I guess I'll chaulk this up to a lesson learned in buying my first smoker. Overall enjoying the smoker but will probably buy a different one soon that's a bit easier to set up.
