The little clips at the end of the skewers to keep the items on (since the skewers hang vertically in the Big Easy) are a bit of a pain to get on and off. The main problem is that there is no easy way to rotate the food like you would with a normal skewer. In order to get the inside facing edges to cook you would want to rotate the skewers 180 degrees halfway through cooking, but that is incredibly hard to do once they have been placed inside the Big Easy no easy way to lift it back out, turn the skewers, and put the rack back in while it is running. Make sure the main rack handle is available and not blocked when you put the kabob base on top of the roasting rack.

So I love doing Kebabs in my Big Easy and these are the best. My kids love them and its fun for everyone to make their own skewer with whatever they like on it. However, after about 5 uses the pins started to get rusty. The cotter style pins really are a handicap. I really can't think of an improvement. I like it. I burned the first attempt. I know now that the kabobs cook fast. The second attempt slightly improved. However a phone call came in when the kabobs were in the home stretch. Results, the meat was a bit well done and dried out. Third attempt, the phones were turned off, the driveway gate locked. Results, perfect. Tasty, juicy, tender. I think isolation is the key.I used beef cubes from a cut of top round, small white onions, cherry tomatoes, pieces of green pepper, salt, black pepper, garlic powder on all three attempts. Since then I have substituted chicken breast (boneless and skinless) that I cubed up. Stayed with the same veggies and seasoning but at the last two minutes dripped some Italian dressing onto the kabobs and let it trickle down the length. It was good.
