if you want the best brine than spend the extra few dollars and buy any Bradley Cure and it will turn out great. I also have used Morton quick cure but Bradley cures beat that hands down. I have learned over time to use half the cure. that gives the meat a light ham flavored tast without drowning the meat flavor in salt. Than i smoke the meat. Always turns out great. Easy to mix in a 5 gallon bucket.

After reading all of the other reviews I decided to get this one. Can I say that it was well worth it. The Pork bellies I smoked today came out great. I did as others had suggested and halved the amount of cure mixed. It was just right.

i used this brine to smoke a turkey at Thanksgiving 2010 and the 18lb. bird was nothing but bone in a matter of minutes. I had to apologize to my aunt. she took most of her turkey back home with her. this is a sweet brine. i use the wet recipe and use half the cure otherwise it is too salty. I brine for a minimum of 24 hours in a covered 5 gallon bucket. I just did a 17 lb. turkey the other day and i used two cups of cure and 2 gallons of water.
