Not only was this rack a bargain, it is ideal for roasting oysters the correct way. The traditional method of tossing a host of oysters onto a hot metal sheet and covering with wet burlap is essentially another way of steaming. With this product, you can really "roast" the oyster. The oyster has a two-part shell. One side is flat and the other is humped. The oyster should be placed on this rack hump-side down. As the rack is placed on a heat source (grill for instance), the oyster will eventually open, leaving some of the brine surrounding the oyster. In essence the oyster cooks in its own "juice". With steaming, the oyster can take any position and the brine will leak out of many of them when they open. I bought three racks for rotation..one to fill with oysters ready to be roasted, another for roasting and another for serving. Stainless steel construction makes them quite durable and easy to clean.
