Love this little rack. It's a very simple rig and very easy to use. Just cut the top off the pepper and slide the coring tool inside to pop out the core. Fill with your favorite cheese. I use a plastic bag with the corner cut off to fill the peppers. Wrap with bacon and bake. If you use this on a BBQ grill don't place the peppers over the flame use the indirect heating method. Very simple to use and lots of fun trying new combinations.
Three things:
1) If you get all of the seeds out the peppers aren't real hot.
2) When you're cutting the peppers DO NOT wipe your eyes, scratch your nose or go anywhere near your face until you wash your hands.
3) Selecting the correct size peppers is important, too small they fall through and are hard to fill. Too fat and they fall over. I made a paper template to take to the market with me.
