I'm not sure if this is true of all digital thermometers or just this one, but it takes so long to move up to the temperature the food is at, that you will easily burn your hand waiting. I do feel that it's accurate though, but it will go from 70 degree to 140 degrees in 5-6 degree increments at first, and then gradually lowers its increments to only 1 degree increments as the reading goes higher. It's painful to watch and then becomes truly painful as you try to keep your hand from getting too hot. I had to hold the thermometer end with tongs. lol
It says right on the package and in the Amazon description that it's 'Instant-Read', but it's clearly not.
The probe is not very long either, maybe 5 inches, which is not ideal for barbecuing, as the name 'charcoal companion' might imply.
