The Vidalia Charcoal and Gas Grill Model 983 Review
Yeah, it's expensive, but it is worth it. We have the Vidalia Charcoal and Gas Grill Model 983. This is really a commercial grade grill made from aircraft quality aluminum; the guts are all heavy duty stainless steel. I love it. Ever since my wife convinced me to give up my Weber charcoal grill and switch to a gas grill, I have regretted it. Not anymore. I just gave away my $700 five burner Kenmore, I just plain hated it. I could not get the thing to cook consistently at 400 degrees a must if you are trying to get the skin to crisp up. And it was impossible to cook indirectly or to properly smoke food. But, not this baby. I have a hard time adjusting it down to 400 degrees. We've had ours about a week and we have cooked on it every night: whole chicken, turkey tenderloins, hamburgers and a leg of lamb. I grilled an assortment of vegetables simultaneously using the direct side grilling awesome Argentinian styled eggplant and on the indirect side, a whole bunch of carrots, three portabella mushrooms, two whole sweet peppers, and several asparagus spears. I still had room to spare on both sides of the grill. The model number refers to the square inches of cooking space. I've used both charcoal and hard woods while using the gas jets. It works as advertised. I can finally use my Steven Raichlen's collection of cookbooks to good purpose. Just put together a rub from his book on rubs and marinades for roasting a pork shoulder tomorrow. Yum. Oh, yeah: It has a ninety-nine year warranty on the shell and they tell you right off not to cover it. All you do is rub it with some WD40 and you are good to go.
